Cathay Pacific has joined several airlines that provide Covid-19 insurance or cover for passengers who fly with them.
The care by Cathay Pacific is issued by AXA, same as with most other airlines doing this, and covers trips for up to 30 days between December 7 – February 28, 2021.

Conclusion
The airline Covid-19 policies help passengers who travel to destinations that require you to show adequate coronavirus related cover (and lessen airlines denied boardings due to lack of one).
They don’t replace travel insurance that covers a wide variety of issues, such as airline flight cancellation to the theft of your belongings or luggage.
I wish that the validity for this Cathay Pacific related overage would have been greater than February 28, 2021. Perhaps they end up extending it.
